Its toxic and anesthetic effects on the human body are stronger than that of ethanol, which can make the nervous system congest and make people feel headache. It is also one of the main sources of bitterness or astringency in Baijiu. In the process of Baijiu brewing, fusel oil can be formed by two pathways, namely, catabolic pathway and anabolic pathway.
